Make Filling with Chinese Chive and Egg

 

This is one of my favorite fillings for stuffed buns. I think most Chinese love the Chinese chive.

Chinese chive, eggs, dried shrimp, cellophane noodles, seasoning

Method:

cellophane noodles1. Soak cellophane noodles in water until they get tender. Then soak in hot water until they get clear. Drain good.

2. Stir Fry eggs, when eggs start getting firm, stir quickly so they turn into chunks instead of a whole piece. Transfer to cutting board, wait until it’s cool, then chop into small pieces.

3. Clean and chop the Chinese chive into really short string. Transfer to container, then coat with cooking oil.

4. Chop dried shrimp and cellophane noodles into small pieces, mix everything together, add seasoning to your taste.

For seasoning, I normally just use salt and little bit sugar, nothing else since Chinese chive has a strong flavor itself.

 

Notes: Cellophane noodles can be replaced with shrimp or vegetables or anything you like.

Eggs can be replaced with ground meat.

This is one of my favorite dishes ever since I was in middle school, especially summer time, when it’s time to harvest banana peppers. I love the hot but not too hot type peppers.

Ingredients:Stir Fried Eggs with Pepper

Peppers, eggs, seasoning to taste

Method:

1. Chop peppers into pieces, get rid of seeds.

2. Mix egg with little cooking wine and salt, maybe some white pepper, too, beat well.Stir Fried Eggs with Pepper

3. Heat up skillet, add cooking oil, cook peppers on medium high heat for several minutes.

4. Pour egg mixture into skillet before peppers get too tender, stir some, to make the egg mixture shape like a pancake.

5. Flip when the bottom get firm.

6. When it’s golden brown on both side, transfer to a plate and serve.

Stir Fried Bitter Melon with Eggs and Wood Ear

Stir Fried Bitter Melon with Eggs and Wood Ear

Bitter Melon is also called Bitter Squash. As its name, it does taste bitter, but it’s good for you, by Chinese sayings. Actually, anything tastes bitter is good for your health, by old sayings in China.

I’m not a bitter melon fan, but I do cook it once a while, mainly stir fry with eggs.

Ingredients:Stir Fried Bitter Melon with Eggs and Wood Ear

2 medium size bitter melon, 3 eggs, 2 red cayenne pepper, 10 wood ear, seasoning to taste.

Method:

1. Soak wood ear in water for about an hour, then clean it up. Tear into smaller pieces if it’s too big.

2. Cut bitter melon in half, scoop the seeds out, then chop into pieces.

3. Chop pepper into pieces.

4. Mix eggs with a little bit cooking wine, set aside.

5. Heat up skillet with high heat, add cooking oil, pour eggs, cook until eggs get firm. Transfer eggs to a plate, set aside.

6. Add cooking oil to skillet, stir fry wood ear until you start hearing it pop.

7. Add pepper and bitter melon into skillet, cook for several minutes, then add salt and pepper, a pinch of sugar. Keeping cooking and stirring.

8. Add cooked eggs back into skillet, keep cooking until bitter melon get some tender.

9. Transfer to plate, serve when it’s hot.

Rice Pancake with Bacon and Green Onion

 

I’m not a steam rice person, so whenever I got some leftover rice, what’s in my mind is when to eat it, it’s how to re-cook it. I like to add more flavor to rice so it will taste much better.

Ingredients:Rice Pancake with Bacon and Green Onion

Egg, Bacon, Leftover Rice, Green Onion, seasoning.

Method:

1. Heat up frying pan on medium heat, fry bacon until crispy, then break into little pieces. Set aside.

2. Chop green onion into little pieces, mix with some salt and any other seasoning you want to use, set aside for several minutes so the green onion will get tender.

3. Mix bacon and green onion together.

4. Add rice to mixture, mix well.

5. Add egg to mixture, make sure it’s not too dry, just enough juice to scoop and shape.

You can blend the batter some if you like it fine.

6. Heat up frying pan on medium high heat, pour some cooking oil, scoop the batter into pan and shape it flat.

7. Flip pancake it’s lightly brown. It’s ready when both side are lightly brown.

8. Serve when hot.

I’m not a tortilla person, but I accidentally fall in love with uncooked tortilla. Believe it or not, it tastes different from the store-bought tortilla. And since it’s uncooked, you can cook it in different ways!

Ingredients:Tortilla Sandwich with Egg and Bacon

2 uncooked tortilla, 1 egg, 1 tsp bacon crumbles, seasoning to your taste

Method:

1. Heat up frying pan on medium high heat, lay one tortilla in pan.

3. Lay second tortilla in pan.

4. Pour egg over tortilla in pan, spread well.

If you are not as lazy as me, you can pre-mix egg and seasonings, then pour over.

5. Sprinkle seasoning and bacon over tortilla.

6. Lay the first tortilla on top, press lightly.

7. Flip tortilla when done.

8. Tortilla is ready to serve when it’s lightly brown.

Stir Fried Eggs with Tomatoes

 

Stir Fried Eggs with Tomatoes

I fell in love with this dish when I was in college. This was one of the best dishes in our dinning hall. Later on I noticed that a lot of people like this dish, too.

Ingredients:Stir Fried Eggs with Tomatoes

2 large (ripe, or close to ripe) tomatoes, 4 large eggs, seasoning.

Method:

1. Soak tomatoes in hot water for about one minutes, then take tomatoes out, peel and chunk to whatever shape you like.

Stir Fried Eggs with Tomatoes2. Add a little bit cooking wine into a bowl, crack eggs into it, beat.

3. Heat up skillet on high heat, add cooking oil, then pour eggs into skillet, cook until eggs are firm. Meantime, keep stirring so eggs will break into pieces. Put cooked eggs back to the bowl, set aside.

4. Add cooking oil to skillet, keep cooking on high heat. Add tomatoes into skillet, add salt, sugar and some pepper to taste, cook until tomatoes get tender and the juice get thick.

It tastes better when you add more sugar compare to regular dish. My goal is cook it with a sour and sweet taste.

5. Pour eggs into skillet, mix well.

6. Mix a little bit corn starch with water, then pour into skillet, stir very quickly.

7. Transfer to a plate, serve hot.

I love it better when serve over rice or noodles.

Pancake with Zucchini and Dried Shrimp

 

Pancake with Zucchini

 

I cooked this type of pancake before, but never tried cooking it with a frame. I thought it looks pretty neat when I first saw it online. It actually tastes pretty good. 

Ingredients:Pancake with Zucchini

1 medium size zucchini, 3 eggs, some all-purpose flour, some dried shrimp*, 2 slices of purple onion, seasoning.

Method:

2. Mix dried shrimp and seasoning with zucchini.

For seasoning, I used salt, sugar and white pepper powder.Pancake with Zucchini

Dried shrimp is pretty salty, so be careful on how much salt you put in.

3. Let the zucchini mix sitting for several minutes.

5. Add flour into zucchini mix, then mix well.

Make sure the batter is not too thick. Add water if needed.

6. Slice onion, then break onion slice into onion ring.Pancake with Zucchini

7. Heat up skillet, add cooking oil, adjust heat to medium high, put onion ring in skillet.

8. Scoop batter into onion ring, flip when the bottom side turn lightly brown.

10. Serve when hot.

You can serve with some dipping sauce. I normally would serve with some vinegar, or mix vinegar, soybean sauce and sesame oil.

Stir Fried Rice

Comparing to regular steamed rice, I like stir fried rice a lot better. Because seasoning makes rice tasting a lot better. So if I have time, I stir fry my leftover rice as much as I can.

Ingredients:Stir Fried Rice

rice, half a onion, eggs, sausage link, green onion, seasoning.

Method:

1. Chop onion, green onion and sausage link into little pieces.

2. Pour a little tiny bit cooking wine in bowl, then mix with eggs, beat well.

3. Heatup skilltet, add some cooking oil, wait until the oil is really hot, pour eggs into skillet, keep stirring until eggs get firm and shape up, transfer into plate, set aside.

4. Add cooking oil into skillet again, adjust heat to medium heat, add onion into skillet, cook until onion get tender.

5. Add sausage into skillet, cook for about 2 minutes.

6. Add rice into skillet, adjust heat to medium high, stirring until rice heat up.

7. Add cooked eggs into skillet, stir well.

8. Add seasoning into skillet, stir well.

For seasoning, I normally use salt, sugar and white pepper powder.

9. Add green onion into skillet, stir well.

If you think the rice is too dry, you can add a little tiny bit of water, cover the skillet, adjust heat to low, cook for 2-3 minutes, stir several times.

10. Transfer to plate, serve hot.
