Potato Chowder with Bacon

I love this potato chowder. I cook it several times every year.

Potato Chowder with BaconIngredients:

4 medium-size potatoes, 1 medium-size onion, 4 strips of bacon, 8oz sour cream, 2 cups milk, 1 can cream of chicken, seasoning to taste.

Methods:

Potato Chowder with Bacon1. Chop potato into small cubes, pour into boiling water, simmer until well cooked. Drain well.

2. Chop onion into small pieces, saute on medium high heat, then transfer to sauce pan.

3. Pour sour cream, milk and cream of chicken into pan, bring to boil, then add potato cubes, bring to boil again, simmer for 10 minutes.

Potato Chowder with Bacon4. Cook bacon until it’s fully cooked, but not crispy, pat dry with paper towel, then break into small pieces.

5. Add bacon to pan, cook for about 15-20 minutes.

I’m not a regular potato salad fun, I like the one with ranch much better.

4 medium size potatoes, 4 eggs, 4 strips of bacon

1. Boil potato and egg, then peel and chop into small cubes.

2. Pan fry bacon, remove from heat before it gets crispy. Use kitchen towel to pat dry, then break into pieces.

4. Mix potato, egg and bacon, then pour mayo mixture over it, mix well.

5. Keep it refrigerated before serving.

1 pound eggplants, 1/2 cup bacon crumb, 1/2 large onion (diced), 1/2 cup bread crumb, 2 large eggs, salt and pepper to taste

Method:

Eggplant Casserole with Bacon and OnionEggplant Casserole with Bacon and Onion1. Cut eggplant into cubes, then boil in a pot with salted water, simmer until eggplant get tender, drain well and set aside.

2. Heat up skillet, add cooking oil, saute onion until tender, then add bacon crumb, stir fry for several minutes, set aside to let it cool.

Eggplant Casserole with Bacon and Onion3. Preheat oven to 400ºF.

4. Mix eggplant and onion, bacon together, then mix egg into mixture, then add seasoning to taste, mix bread crumb into mixture.

5. Scoop the mixture into baking dish, bake until golden brown, about 30 minutes.

I used individual baking dish, baked about 25 minutes.

Zucchini and Onion Casserole with Bacon and Cheese

I started liking casseroles now. But I think I like the leftover better because the flavor really get soaked in several hours’ sitting.

Zucchini and Onion Casserole with Bacon and CheeseIngredients:

2 medium size zucchini, half a onion, 5 eggs, 1 small tomato, 1 cup shredded cheese (divided into 2 portion), 1 cup bread crumb, 1 clove garlic, 3 tbsp cooking oil, seasoning to taste.

Method:

2. Mince garlic.

3. Mix all the ingredients but 1/2 cup cheese together.

4. Pre-heat oven to 375ºF.

I used individual serving size baking dishes, baked 25 minutes.

6. Take baking dish out, sprinkle with leftover cheese, bake until cheese is done.

Steamed Cabbage with Bacon and Onion

 

Steamed Cabbage with Bacon and OnionAmerican cabbage is different from Chinese ones. Cabbage leaves in Chinese version are much thinner and are easier to stir fry. I had a hard time to cook cabbage when I first moved here. This is the first cabbage dish in American version I learned here.

Ingredients:Steamed Cabbage with Bacon and Onion

cabbage, onion, bacon, chicken broth/water, salt and pepper to taste

I cooked half of the cabbage, so I used half of the onion in the picture.

Method:

1. Chop onion to small pieces, set aside.Steamed Cabbage with Bacon and Onion

2. Chop cabbage to cubes, set aside.

3. Heat up skillet, add cooking oil, set to medium high heat, cook onion for several minutes until tender.

4. Add cabbage to skillet, cook for about 3 minutes, add salt and pepper, keep stirring until cabbage start sweating.Steamed Cabbage with Bacon and Onion

5. Cook cabbage until it start shrinking, add chicken broth/water until halfway cover cabbage. Bring broth to boil on high heat, then simmer on low heat for 10 minutes.

I don’t like to have too much juice in dish, so I don’t really pour too much broth. If you like to have more juice, you can add water/broth until cabbage are fully covered.Steamed Cabbage with Bacon and Onion

6. Add bacon, stir, simmer for another 10 minutes.

7. Stir well, simmer for another 10 minutes.

8. Serve hot.

I’m not a steam rice person, so whenever I got some leftover rice, what’s in my mind is when to eat it, it’s how to re-cook it. I like to add more flavor to rice so it will taste much better.

Ingredients:Rice Pancake with Bacon and Green Onion

Egg, Bacon, Leftover Rice, Green Onion, seasoning.

Method:

1. Heat up frying pan on medium heat, fry bacon until crispy, then break into little pieces. Set aside.

2. Chop green onion into little pieces, mix with some salt and any other seasoning you want to use, set aside for several minutes so the green onion will get tender.

3. Mix bacon and green onion together.

4. Add rice to mixture, mix well.

5. Add egg to mixture, make sure it’s not too dry, just enough juice to scoop and shape.

You can blend the batter some if you like it fine.

6. Heat up frying pan on medium high heat, pour some cooking oil, scoop the batter into pan and shape it flat.

7. Flip pancake it’s lightly brown. It’s ready when both side are lightly brown.

8. Serve when hot.

 

Tortilla Sandwich with Egg and Bacon

 

Tortilla Sandwich with Egg and Bacon

 

I’m not a tortilla person, but I accidentally fall in love with uncooked tortilla. Believe it or not, it tastes different from the store-bought tortilla. And since it’s uncooked, you can cook it in different ways!

Ingredients:Tortilla Sandwich with Egg and Bacon

2 uncooked tortilla, 1 egg, 1 tsp bacon crumbles, seasoning to your taste

Method:

1. Heat up frying pan on medium high heat, lay one tortilla in pan.

3. Lay second tortilla in pan.

4. Pour egg over tortilla in pan, spread well.

If you are not as lazy as me, you can pre-mix egg and seasonings, then pour over.

5. Sprinkle seasoning and bacon over tortilla.

6. Lay the first tortilla on top, press lightly.

7. Flip tortilla when done.

8. Tortilla is ready to serve when it’s lightly brown.
