Hot and Spicy Bite-size Potato

Yellow potato is my favorite potato now. It tastes much better than regular potato.

I bought some bite-size yellow potato. The original plan was roasted them in the oven, but I really didn’t want to deal with the hot oven, so I decided to cook it in a different way.

Ingredients:

bite-size potato, white sesame seeds, roasted peanuts, green onion, crashed pepper, seasoning.

Methods:

1. Put potatoes into pot, cover with cold water. Bring to boil on medium high heat, then simmer for 15 minutes.

           

2. Drain potatoes, then rinse with cold water.

3. Press on potatoes to make them some flat.

4. Meantime, chop green onion and mash peanuts, then put in a bowl with sesame seeds and crashed pepper.

5. Heat up skillet, pour some oil, then start frying potatoes, flip until one side is golden brown, lay on plate when they are golden brown on both sides.

        

6. Heat some oil with a small pot on medium heat. Pour oil into the seasoning bowl.

The oil can’t be too hot, otherwise the pepper will be brunt out. If you are not sure about the temperature, you can sprinkle a couple of pieces of the pepper to test the temperature. Turn heat off when temperature is right, and pour into bowl right away.

7. Let the seasoning cook for a minutes, then Add salt, pepper and any seasoning you want to add into the bowl. Sprinkle on top of potatoes.

Now it’s time to serve!

Stuffed Tortilla with Chinese Chive

Uncooked tortilla is my forever favorite now. The more I cook with it, the more I love it. It is so easy and convenient. And more important to me, it does not have the smell as the cooked tortilla!

Ingredients:

uncooked tortilla, Chinese chive, eggs, spam, seasoning to your taste.

Method:

1.Chop spam and Chinese Chive into little pieces. Then add egg into the mixture, mix well to make a thick mixture.

2. Heat up the skillet on medium heat, add a little bit oil into skillet.

3. Heat one tortilla until you see little bubble coming up, flip it.

     

4. Scoop some egg mixture on top of the tortilla, make it flat, then hold one side to cover over the other side, make it shape as a omelet.

     

5. Flip the tortilla until the bottom side is golden brown. It’s done when both sides are golden brown.

You can use fork or whatever to punch some holes when you cook it, it will cook sooner.

You can replace any ingredients with something else. I tried shrimp instead of spam, it tastes good, too.

Tortilla is more crispy when first came out of pan. If you heat it up with toaster oven or re-heat it with frying pan, it won’t be too tender.

One of my Friends gave me some blueberry. I don’t eat blueberry as fruit, but I do love cooking with it.

2 eggs, 2 ¼ teaspoons baking powder, 1 ½ cups flour, 1 cup milk, 3 tablespoons sugar, 3 tablespoons melted butter, ¾ teaspoon salt, 1 cup blueberries

Methods:

Pancake with Blueberry1. Rinse blueberry, pick out all the bad ones, use paper towel to pat dry, set aside.

2. Mix flour, sugar, baking powder and salt, set aside.

3. Mix butter with 1/2 cup milk, pour over flour mixture.

Pancake with Blueberry4. Add another 1/2 cup milk and eggs, mix well until batter get smooth.

5. Add blueberry into batter, mix well.

6. Heat up frying pan on medium heat, add a little bit cooking oil, pour 1/2 cup batter into pan, spread evenly.

Pancake with Blueberry7. Flip pancake carefully when you see bubbles come out and pop.

8. Cook pancake until both side get golden brown.

9. Serve with syrup and butter.

I like to eat pancake plain. It tastes good without syrup.

I had a hard time to name this in English. I hardly see this in supermarket or restaurant here. The only time I saw it was in a restaurant called ” Flat Top”, and it’s not exactly the same kind.

Ingredients:

Method:

1. Slowly pouring water in the flour, stir quickly at same time. Flour will turn into little pieces. Stop pouring water when you don’t really see much loose flour.

2. Punch flour with hands or mixer until form a smooth ball, cover with moist cloth, set aside for a while.

3. Roll the dough into a big sheet, sprinkle with salt, pepper, and any other seasoning powder you want to add. Use roller to roll seasoning into dough sheet.

4. Brush a thin layer of cooking oil on dough sheet, then roll it into a long strip.

5. Cut the strip into several even short pieces, shape each piece into a round-shape dough, hide ends at the bottom, roll it into a round thin sheet.

6. Heat up frying pan, add a little bit cooking oil, set on medium low heat.Pan Fried Flat Bread with Seasoning

7. Lay bread in pan, slide it around to evenly coated with oil, then flip, coat the other side with oil.

8. Flip bread when the bottom get lightly golden brown.

9. It’s ready to serve when both side are golden brown.

10. Tear or Cut into pieces to serve or serve it whole.

I’m not a tortilla person, but I accidentally fall in love with uncooked tortilla. Believe it or not, it tastes different from the store-bought tortilla. And since it’s uncooked, you can cook it in different ways!

Ingredients:Tortilla Sandwich with Egg and Bacon

2 uncooked tortilla, 1 egg, 1 tsp bacon crumbles, seasoning to your taste

Method:

1. Heat up frying pan on medium high heat, lay one tortilla in pan.

3. Lay second tortilla in pan.

4. Pour egg over tortilla in pan, spread well.

If you are not as lazy as me, you can pre-mix egg and seasonings, then pour over.

5. Sprinkle seasoning and bacon over tortilla.

6. Lay the first tortilla on top, press lightly.

7. Flip tortilla when done.

8. Tortilla is ready to serve when it’s lightly brown.
