Spaghetti with Meatball and Shrimp

I was never a spaghetti person, until back a while ago, I have some spaghetti at a friend’s place. He cooked the spaghetti so good, I fell in love with it. I know my spaghetti tastes nowhere close to his cooking, but I’ll keep trying.

Ingredients:

spaghetti, pasta sauce, meatball, shrimp, garlic leaves, butter, chicken broth.

1. Chop garlic leaves into small pieces.

2. Cook spaghetti by instructions, drain well, then mix with a little bit butter, set aside.

3. Meantime, pour some chicken broth and pasta sauce into sauce pan, bring to boil on medium heat, add meatball, bring to boil again, then add shrimp, keep cooking until shrimp change color.

4. Sprinkle garlic leaves, mix well.

5. Transfer to plate, serve when hot.

I decided to start a vegetable garden. After some work, now it’s almost set up and I planted some garlic about 2 month ago. It’s my first time planting garlic in soil, I noticed that the garlic is growing slow because of the temperature, but it looks much stronger, and looks very healthy. After a rainy morning, everything looks fresh and green.

I love stuffed buns since the filling bring much more flavor to the buns. This is one of my favorites among all the buns.

Filling: Chines chive, eggs, dried shrimp, cell0phane noodle, seasoning

Wrap: flour, 2 tsp dry yeast, 2 tsp sugar

1. Mix yeast and sugar, soak in warm water. Then set aside until it’s covered by bubbles.

You can stir some to speed up the dissolving process.

Stuffed Bun with Chinese Chive and Egg2. Soak cellophane noodles in water until they get tender. Then soak in hot water until they get clear. Drain good.

3. Slowly pour yeast mixture into flour, stir quickly meantime, so flour stick together, turn into little pieces. Stop until you only see little loose flour.

Stuffed Bun with Chinese Chive and EggAdd more warm water if you need to. The dough needs to be really tender.

4. Form the flour pieces into a smooth ball, this is your yeast dough, set aside.

5. Stir Fry eggs, when eggs start getting firm, stir quickly so they turn into chunks instead of
a whole piece. Transfer to cutting board, wait until it’s cool, then chop into small pieces.

Stuffed Bun with Chinese Chive and Egg6. Clean and chop the Chinese chive into really short string. Transfer to container, then coat with cooking oil.

7. Chop dried shrimp and cellophane noodles into small pieces, mix everything together, add seasoning to your taste.

For seasoning, I normally just use salt and little bit sugar, nothing else since Chinese chive has a strong flavor itself.

8. Separate dough into little even pieces, then roll into little round wrap, fill in fillings, seal good, then flip upside down.

Stuffed Bun with Chinese Chive and Egg9. Heat up the frying pan, add cooking oil, adjust heat to medium low.

10. Fry the buns to golden brown, then flip, keep frying until both side turn golden brown.

11. Serve when hot.

I like to mix vinegar, soybean sauce and sesame oil together as dipping sauce, serve with stuffed buns.

I love any kind of flat bread with filling, green onion, meat, sausage, you can pretty much put anything as fillings.

filling: flour, green onion, cooking oil, seasoning

Method:

2. Chop green onion into little pieces, mix with salt, pepper and any seasoning you want to use to flavor flat bread.

Layered Flat Bread with Green OnionLayered Flat Bread with Green Onion3. Pour proper amount of flour into a bowl, and slowly pour the yeast mixture into it, and stir with a fork or chopsticks quickly, so flour with turn in little pieces.

4. Pour in more warm water if needed until you don’t see much loose flour in bowl.

6. Sprinkle some flour over green onion, then pour in some cooking oil, mix well, add more flour and oil if needed if you the batter is thick and enough to use.

7. Roll the flour ball into a big flat sheet, spread green onion mixture as a thin layer on it, then roll the sheet into a long string.

8. Divide the string into several even pieces, reform each piece into a round shape, put both ends at the bottom, then roll it into a thin sheet.

Layered Flat Bread with Green Onion9. Heat up frying pan, add a little bit cooking oil, set heat to medium low, cook flat bread until it’s golden brown on bottom side. You can cover the pan with lid while cooking.

10. Spray or brush some cooking oil on top side, then flip the flat bread.

11. Transfer to plate when both sides are golden brown.

I had a hard time to name this in English. I hardly see this in supermarket or restaurant here. The only time I saw it was in a restaurant called ” Flat Top”, and it’s not exactly the same kind.

Ingredients:

Method:

1. Slowly pouring water in the flour, stir quickly at same time. Flour will turn into little pieces. Stop pouring water when you don’t really see much loose flour.

2. Punch flour with hands or mixer until form a smooth ball, cover with moist cloth, set aside for a while.

3. Roll the dough into a big sheet, sprinkle with salt, pepper, and any other seasoning powder you want to add. Use roller to roll seasoning into dough sheet.

4. Brush a thin layer of cooking oil on dough sheet, then roll it into a long strip.

5. Cut the strip into several even short pieces, shape each piece into a round-shape dough, hide ends at the bottom, roll it into a round thin sheet.

6. Heat up frying pan, add a little bit cooking oil, set on medium low heat.Pan Fried Flat Bread with Seasoning

7. Lay bread in pan, slide it around to evenly coated with oil, then flip, coat the other side with oil.

8. Flip bread when the bottom get lightly golden brown.

9. It’s ready to serve when both side are golden brown.

10. Tear or Cut into pieces to serve or serve it whole.

Many of my co-workers love the Kolaches from Shipley’s Donut. one day, I was in the mode of trying to bake them at home. Since I don’t really like the their recipe, I decided to use one of my favorite dough recipes instead. It turns out good, really good.

Ingredients:

Dough: 2 tsb dry yeast, 2 tsb sugar, 80g warm milk, 1.5 cups bread flour, 10g lemon juice, 1 egg, 2 tbsp butter (room temperature), a pinch salt.

Filling: 6 beef frank, proper amount grated cheese.

Topping: honey:water = 1:1, proper amount.

1. Mix dry yeast and sugar, melted by warm milk, set aside for several minutes, or until you see lots of bubbles on the surface.

2. Add all the dough ingredients except butter into yeast mixture, form a ball.

3. Add butter to dough, punch for several minutes until dough is smooth and elastic.

If you’re in rush, you can let dough rest for about 10-15 minutes.

5. Punch dough down, then seperate into 6 equal pieces.

6. Roll each pieces into rectangle shape, a little bit wider than length of the beef frank, and cut one end as shown in picture.

7. Sprinkle grated cheese at the end with cuts, roll beef frank as shown in picture, make sure seam is at bottom. Then set aside until double-sized.Caterpillar Shaped Bread with Beef Frank and Cheese

8. Preheat oven to 350 degree.

9. Mix honey and water, brush on top of bread, bake about 20 minutes or until golden brown.

10. Brush honey mixture on top of bread right after taking bread out of oven, transfer to wired rack to cool.

I was in a playing mode, and tried to do the beef frank in a different way, below is what I did:

I love the uncooked tortilla. It’s so easy and convenient to cook with it. And it tastes good, better than cooked ones.

Ingredients:Tortilla Burrito with Ground Meat

uncooked tortilla, ground meat, egg, green onion, seasoning.

Method:

1. Chop green onion into little pieces, mix with a little bit salt, set aside for several minutes.

3. Season meat, then mix with green onion.

Use less salt, since green onion is salty.

4. Brush a thin layer of egg on a tortilla, then spread a layer of meat, then brush a layer of egg and roll it up.

5. Heat up the frying pan, add some cooking oil, pan fry the burrito until golden brown on medium heat.

6. Serve hot.

I’m not a tortilla person, but I accidentally fall in love with uncooked tortilla. Believe it or not, it tastes different from the store-bought tortilla. And since it’s uncooked, you can cook it in different ways!

Ingredients:Tortilla Sandwich with Egg and Bacon

2 uncooked tortilla, 1 egg, 1 tsp bacon crumbles, seasoning to your taste

Method:

1. Heat up frying pan on medium high heat, lay one tortilla in pan.

3. Lay second tortilla in pan.

4. Pour egg over tortilla in pan, spread well.

If you are not as lazy as me, you can pre-mix egg and seasonings, then pour over.

5. Sprinkle seasoning and bacon over tortilla.

6. Lay the first tortilla on top, press lightly.

7. Flip tortilla when done.

8. Tortilla is ready to serve when it’s lightly brown.

Pancake with Zucchini and Dried Shrimp

I cooked this type of pancake before, but never tried cooking it with a frame. I thought it looks pretty neat when I first saw it online. It actually tastes pretty good. 

Ingredients:Pancake with Zucchini

1 medium size zucchini, 3 eggs, some all-purpose flour, some dried shrimp*, 2 slices of purple onion, seasoning.

Method:

2. Mix dried shrimp and seasoning with zucchini.

For seasoning, I used salt, sugar and white pepper powder.Pancake with Zucchini

Dried shrimp is pretty salty, so be careful on how much salt you put in.

3. Let the zucchini mix sitting for several minutes.

5. Add flour into zucchini mix, then mix well.

Make sure the batter is not too thick. Add water if needed.

6. Slice onion, then break onion slice into onion ring.Pancake with Zucchini

7. Heat up skillet, add cooking oil, adjust heat to medium high, put onion ring in skillet.

8. Scoop batter into onion ring, flip when the bottom side turn lightly brown.

10. Serve when hot.

You can serve with some dipping sauce. I normally would serve with some vinegar, or mix vinegar, soybean sauce and sesame oil.

I love the shape of the bread, it looks really like a flower. I just couldn’t stop thinking of baking it myself. Now here it is.

Ingredients:

300 gram flour, 60 gram milk, 1 little bag dry yeast, 2 & 1 egg yolk, 1 egg, 20 gram condensed milk, 40 gram sugar, 40 gram  cream, 45 gram butter, a pinch salt

Method:

1. Set all the ingredients to room temperature.Flower Shaped Bread

2. Heat milk, make sure it’s warm.

3. Mix yeast with same amount sugar, dissolve in warm milk, set aside until it’s full of bubble.Flower Shaped Bread

4. Set 1 egg yolk aside, mix everything together until the dough is smooth. Then set aside (you can coat the dough with some oil, so it won’t be sticky.) until dough double in size.Flower Shaped Bread

5. Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into 8 equal pieces. Roll each piece flat as showing in picture.

7. Form the stick as showing in pictures, hide the ends at the bottom. Then place on greased baking sheet until double in size.

8. Preheat oven to 350°F.Flower Shaped Bread

9. Brush the surface with the egg yolk, then bake until it’s light brown on surface.

10. Brush with butter after taking out of oven so it looks shining (optional). Serve when it’s warm.
